Chicken
Cook at 375F (mark 5) for 20mins per lb. plus 20mins over, vary times depending on ratio of bone and tightness of trussing.
Goose
Cook at 400F (mark 6) for 15mins per lb. plus 15mins over. Baste once. Cover bird with double thickness of greaseproof paper. Remove if necessary at the end to brown bird.
Game
Start at 450F (mark 8) for the first 10mins, reduce to 400F (mark 6) for the rest of the time. Young pheasants take 30-40mins, older ones 40-60mins. Do not roast very old birds. Use a double tin or baste frequently.
Venison
Cook for 30mins per lb plus 30mins over. Cook in flour and water paste at 450F (mark 8) for 10mins, then reduce to 375F (mark 5) for the remainder of the time.
