WELSH LAMB CUTLETS WITH WATERMELON, MINT AND LIME SALSA

Serves: 4

Cooking time:  Approximately 12-16 minutes, plus marinating time

INGREDIENTS:

8 lean Welsh lamb cutlets or loin chops

30ml (2tbsp) olive oil

2 cloves garlic, crushed

1/2 lime, juice and rind

Watermelon, Mint and Lime Salsa:

450g (1lb) watermelon, cut into small cubes (about 1/4 of melon)

1/2 lime, juice and rind

30ml (2tbsp) fresh mint, finely chopped

METHOD:

Place into a shallow dish oil, garlic, lime juice and rind, and chops.  Cover and leave to marinate in the fridge for 2-3 hours.

Meanwhile make salsa: combine together watermelon, lime juice, rind and mint.

Cook chops on a preheated barbecue or grill for approximately 12-16 minutes depending on thickness of chops and how you like them cooked.

Serve chops with a pile of fruit salsa.
