Griddled Welsh Sirloin Steak with Leeks & Asparagus drizzled with Pesto Sauce

Cooking Time:  Approx. 10 minutes

Ingredients:

2 lean beef sirloin steaks 30ml (2tbsp) green pesto sauce 2 leeks, finely sliced 100g (4ozs) asparagus 50g (2ozs) frozen peas 6 baby carrots, peeled 30ml (2tbsp) crème fraiche 75-100g per person of ribbon pasta or large tubes

Method:

Preheat griddle plate, spread steaks with 15ml (1tbsp) green pesto sauce and cook steak in the griddle pan for:

Rare – 2 ½ minutes per side Medium – 4 minutes per side Well done – 6 minutes per side

Meanwhile, steam vegetables and cook pasta.  Drain pasta, add 15ml (1tbsp) green pesto sauce and crème fraiche and stir through.  Cut steaks into chunky strips.  Place a pile of pasta on to a plate with a selection of spring steamed vegetables and beef steak strips.
